Healthy! Pizza

…with the thinnest, crunchiest crust ever. And it’s gluten-free! Forget about trying to make your own dough. Just pick up a package of brown rice tortillas at Trader Joe’s (really). Bake the tortilla (at 350) for about five minutes (till it stiffens). It turns into a 12-inch super-thin cracker. Add your favorite toppings, and lots of shredded (hopefully organic) mozzarella. Bake for 5 more minutes, or till the cheese melts.

I slice and serve it on a wooden cutting board. My favorite toppings are roasted veggies, spinach, kalamata olives, mozzarella, a drizzle of olive oil, fresh ground black pepper, red chili flakes and course-ground garlic. See my post on “Roasted Veggies.” Any red sauce can work as a pizza sauce. Thicken with a little tomato paste if necessary. I use bruschetta sauce from Trader Joe’s, or make my own. Bruschetta sauce is basically just stewed diced tomatoes, onions and garlic, with olive oil and spices. Avoid commercial pizza sauces with corn syrup.  Here’s another great healthy pizza:
